The traditional cuisine of the city of Saltillo, Coahuila, is notable for its wonderful variety of dishes. It is the result of a long search in employment and combination of ingredients for flattering taste, smell and sight.
The gastronomic specialities of Saltillo are delicious dishes based on beef, veal, mutton and lamb. The tacos, arracheras, la machaca, the famous frites (kid in blood) and tacos of machaca (a type of dried meat “deshebrada”) with egg are clear examples. Mexican sweets are famous for their pies nut, the sweet milk with nuts and piñon; the box of quince jelly and perón; homemade jam of the fruit of the region and pear and quince spirits.
